At a recent family gathering, I got to savor one of the tastiest fish barbecues ever. This was prepared by Sunday, a pro in the fish barbecue business. I found myself going back for One……..Two……….Three helpings of whole fish. Call it gluttony, but if you ask me I’d say the fish was “fantabulously gooooood!!!”. It was spicy, hot & full of flavor. I first got drawn to his barbecue stand by the aroma and after a little chitchat; he was kind enough to show me how it’s being prepared. Let’s take a look below:
Prep time: 40 mins
Cook Time: 12 mins
Total time: 52 mins
Chef: Sunday
Ingredients
3 Whole Croaker Fish
3 tbsp. freshly ground Red Chili pepper
1 tbsp. freshly ground Black pepper
2 tbsp. Vegetable Oil
½ Red Onion, chopped
5 cloves Garlic,minced
1 tsp. Salt to taste
Directions
- Preheat the barbecue grill 30 mins prior to cook time.
- Remove the scales from the fish and gut; Wash thoroughly
- Place the fish in an aluminum foil and make about 6 slashes on each fish with a sharp knife (This is to help the seasoning penetrate into the fish easily)
- Mix the peppers in a bowl, Add the chopped onion, Minced garlic, Salt and 3 tbsp. vegetable oil; Stir to incorporate the mixture together
- Rub the pepper mixture all over the fish with a brush and cover with the aluminum foil; Leave to marinate for 30 mins (While the barbecue grill heats up)
- Place the fish on the barbecue grill in the fish holder and leave to cook for 6 mins on each side.
- Garnish with salad and serve.
