E&W Recipe: Spicy Baked Chicken Breast and Pasta



We love food here. But healthy tasty food is even better. And healthy tasty spicy food is much much better. I could keep going but I'll just get to the recipe :)

Ingredients (serves 4):
1 lb boneless skinless chicken breasts
2 medium green peppers
1 tbsp suya spice (or regular dry red pepper)
1 medium onion
1 tbsp chopped garlic
2 cups of Garden Rotini pasta (or Whole Wheat Rotini)
Salt

Directions:


  1. Chop the green peppers and onions.
  2. In a dish large enough to marinade all the chicken, throw in the suya spice (or the dry red pepper), and mix it in with about a cup of water. Add in the chopped garlic, green peppers, and onions. Mix well.
  3. Wash the chicken and chop into about 8 pieces. Place the chicken pieces into the marinade, and leave for about an hour.
  4. Preheat the oven to 350 degrees.
  5. Place the chicken pieces on a baking tray or in a baking dish with a little of the marinade and all the green peppers and onions thrown on top, and pop into the oven. You do not need oil or grease because you have the marinade to serve as the juice ;)
  6. Leave to bake for about 40 minutes or until it has achieved the desired texture.
  7. While the chicken is baking, fill a pan with about 2 cups of water. Add in a dash of salt, and bring to the boil.
  8. When the water is at boiling point, add in the pasta. Cook for about 10-12 minutes.
  9. When the chicken is all baked, serve with the pasta, and enjoy!

Sometimes, I like to enjoy the pasta with about a tsp of grated romano cheese. Why? Because you get spicy and creamy all in the same dish. Just remember that that contains about 30 additional calories. 

This whole meal contains approximately 350 to 400 calories. Not bad, eh? Try the recipe and let me know what you think.

However, what I'd like to introduce today is a pretty simple recipe, a decorated cake with no complex decoration needs.

  2. The moment we think of bakery comfort recipes first thing that comes into mind is the cake. We cannot even think of celebrating any happy occasion without a cake. A cake is the essence of all parties liked by people of all ages.
