Eights & Weights Recipe: Sauteed Tofu and Wild Rice



Tofu requires great strategy to cook correctly. There are many different levels of firmness, but unless you are making soup, I always suggest you go for the Extra Firm tofu. This is because you don't want it all broken up in your meal, but solid and ready to absorb whatever it is cooked in.

Even with the extra firmness, tofu can still be pretty soft and brittle if it is not cooked properly. For this reason, some people choose to fry their tofu. However, because that usually involves a lot of oil, I choose to grill mine. That way, I keep the texture, but still keep it clean and healthy.

For this simple meal, let's take a look at what you will need (it serves 4). Please note that you need a grill (I use an indoor electric grill). If you do not have a grill, you can try broiling this in the oven.

Recipe: Quinoa with Cranberries and Almonds



Quinoa is one of my favorites, which is why I have many recipes on this blog using quinoa. It is tasty when prepared right, and is a great alternative to rice or pasta because it is a natural "whole grain" food and considered a complete protein (all 8 essential amino acids). I say "whole grain" because it is not really a grain, but it has all the characteristics. And it has a nutty flavor, while it absorbs flavors from the other things you cook it with. Plus, it only takes about 20 minutes :)

Thought you Couldn’t Eat a Burger, Right?



Burgers always get a bad rep. And there is a reason: they usually contain tons of calories. I mean, there’s the patty, there’s the bun, and then there’s always some high-calorie dressing. And if you want to go really crazy with the calories, there’s bacon, cheese, and all sorts of toppings. But hey, if you are trying to eat healthy, this does not mean you can never have a burger.

E&W Recipe: Baked Plantain and Egg Sauce



Plantains are yum. No, yellow plantains are yum (I like green and all, but the yellow ones are tastier). Like they are God's special gift to us. But they can also be very murderous in the calories department. So the trick is to minimize the portions we eat, and find healthier ways to make them besides frying. Here's one :)
