Ingredients:
2 turkey sausage links (chopped up)
1 small chopped onion
½ tsp chopped garlic
½ cup of coconut water
1tbsp curry powder
½ tsp crushed red peppers
1 cup quinoa
1 medium potato
½ of a 6oz can tomato paste
Chopped spinach (I did not measure the spinach, so use your discretion)
Non-stick cooking spray
Salt

Directions:
Bring about 2 cups of water to a boil. When the water is boiling, put in the quinoa, and add a dash of salt. Let it boil for about 20 minutes, adding water where necessary and managing the texture of the quinoa.
Peel the potato, put it in a pan with about 1 cup of water, and let it cook for about 10 minutes.
Lightly spray a pan with the cooking spray. When it is hot, add in the onions and garlic to brown a little. Then add in the turkey sausage and let it brown for about 5 minutes stirring continuously.
Next, dice the potato and add it into the pan. Put in the curry powder, peppers, and the coconut water. Let it cook for about 10 minutes, and then add in the tomato paste. Stir continuously, leaving it doe about 10 minutes.
Serve!
